Just look at that juicy goodness. Sometimes I see delicious recipes in magazines that I want to make. Like this one. So before you go all cray on me, take a deep breath. I'm not trying to pass this off as my own recipe. From time to time I'd like to share with you recipes I make and love that OTHER people come up with! Other bloggers, magazines, or food TV shows. Some of my favorite recipes of all time have come from some of those mediums! … [Read more...]

Grilled Pizza Brava
Grilling pizza. Wow, what an addition of flavor to pizza I can't describe. You've GOT to try this. Because I was making pizza dough by hand for the first time, I watched this very helpful video from Food Network. If you're uneasy about making your own dough this will be very helpful and put you at ease! I used the same method in the video. What I liked the most was that I could do it all by hand! I didn't need a mixer. The video doesn't … [Read more...]
Should you be among those avoiding gluten?
Gluten, gluten, gluten! Such a hot topic these days. I thought it would be a good idea to address the gluten issue. This post should help you to understand what gluten is, what types of adverse reactions people can have to it, and what testing for adverse gluten reactions looks like. Hopefully by the end of it, you will have a better idea as to whether or not you should be among the growing group of people who go gluten-free! Simply … [Read more...]
Intern Quinoa Salad with Pan Seared Salmon and Balsamic Greens
Prepare yourself. Might be one of my most fav food pics I've taken! If that pic doesn't make you want to eat this you might be blind. What you see above isn't even the completed dish, but it certainly could be a meal on its own! (All that's missing from the recipe is the salmon on top.) If you're fan of plant-based/vegan food, eat your heart out! (Just sub your favorite liquid sweetener in for the 1 teaspoon honey that's in the balsamic … [Read more...]
Kim’s 2-Ingredient Mango Ice Cream
Two ingredients. Frozen mango + coconut cream = the most delicious, creamy, refreshing, amazing, ice cream that's just basically screaming "summatime!!!!" But first let's play a little game. Which one of these is not like the others? Really hard, I know. A bunch of short Italians (four of my cousins with my aunt and uncle) and then this tall, gorgeous, fair skinned, light haired beauty! Well that beauty is Kim. … [Read more...]
Roasted Carrots with Lemon-Cumin-Honey Glaze
Just look at these carrots! All cute and ready to be roasted. I found them at our local natural/organic grocery store on a day where I went shopping only knowing I need about 6 different veggies, but I just wanted to go and see what looked good. Sometimes I write out a super detailed shopping list (this happens most of the time) and I plan out exactly what I want to buy. With produce, I often get there to find that what I wanted looks sad … [Read more...]
Coconut Refresh Smoothie
I'm feeling super inspired today. Well maybe not just today, but lately. My path is getting clearer and clearer despite so many unknowns. Um, ironic much? Is that even the right use of the word ironic? I feel like the other day I heard we use that word incorrectly all the time... anybody else know what I'm talking about? Do you remember when your career path/passion became clear? Are you still figuring it out? No matter where you are, … [Read more...]
Heirloom Tomato Bake
Can we take a minute to pause and enjoy this gif??? (<--- techy word for this spiffy animation below) Hollaaaa! Hugs, high fives, male-sport-butt-slaps to Dan the Man for walking me through this one. You don't want to know how long it took me to make a seven second animation. Longer than it will take you to make this dish!!! You know what I'm talking about with the male-sport-butt-slaps, right? Exhibit A, B, and C. Look for it from … [Read more...]
Buttered Green Beans & Carrots
Sometimes simple is best. In the summertime when green beans are fresh and crisp, and fresh carrots are abundant, I don't want to do a lot to them when I cook. They're so good as-is that I find simple is best. It feels funny sometimes to post such simple recipes, because it doesn't feel creative! It doesn't feel original. I've mentioned this once before in greater detail in my Ready, Set, Spinach recipe post. At the same time I have heard … [Read more...]
Soul Mac
Soul mac and cheese. I learned recently that another term for legit mac and cheese is Soul Macaroni and Cheese. So not mac and cheese from a box. And not my mom's legendary, simple, everyday, staple mac and cheese I grew up eating (which I will share with you at some point). Soul mac and cheese is legit - you thicken milk with a traditional roux (fancy word for cooking flour in fat like melted butter). Then you add cheese. Then you … [Read more...]
Fresh Tomato Sauce
This is my favorite way to make fresh tomato sauce. The flavors are incredible: sweet, savory, umami (yes, tomatoes have umami!), fresh, Italian, summery. You start by roasting the tomatoes in the oven which makes them sweet. Because of this, you you can actually make this sauce year-round, even when tomatoes aren't sweet or in season. Thankfully we don't have to worry about that right now since it's summer!! The weather's been in the 90's … [Read more...]

Though I'm not strictly paleo and vow to never even remotely follow any diet again, I still cook and eat a lot of things that would be considered paleo because I do like the idea of eating whole, real food. Enter Paleo Banana Blender Bread! … [Read more...]
Spanish Radicchio Salad with Manchego
One of the best things about living in Portland was the amazing restaurants. My favorite of which was probably Toro Bravo. I think I ate there more than any other restaurant in Portland. It's a Spanish tapas type restaurant and I enjoyed it so much because most of the time the menu looked quite simple like "tomato rubbed toast" for example. What came out was … [Read more...]
Ready, Set, Spinach
Looking for a super quick, delicious, healthy side dish? Ready… set… spinach. Reality, folks. I make dishes like this all the time. Sometimes I feel like I have to share elaborate, complicated, fancy dishes on the blog. Maybe it's the overachiever/ perfectionist in me that feels like something has to be over-the-top or perfect to be well-received. But it doesn't. After all, it's not how I cook all the time! Whose standard am I following? … [Read more...]
