Sometimes there's a benefit to my need for background noise. I like to watch shows or listen to music while I'm cleaning the kitchen, folding laundry, or doing other chores I don't always get excited about. It's not very mindful of me to do that, but as I said, sometimes there's benefits. For example, I don't waste really good shows for this. I reserve those for when I can prop up my feet, cuddle with my man, and sink into an episode. I … [Read more...]

Easy Baked Chicken Parmesan
Chicken parmesan is usually made with the traditional breading procedure: chicken dipped in flour, dipped in egg, then dipped in breadcrumbs. Then it's pan fried. This recipe, is a liiiitle different. No traditional breading. Makes it a bit easier. Also, I find baking is easier on the cleanup than pan frying. The secret ingredient for this Easy Baked Chicken Parm? Mayonnaise. That's right. Mix some mayo with parmesan, coat the … [Read more...]
BLTC Salad
Bacon. Lettuce. Tomato. Caesar. BLTC. Heck yeah. So I lied. I said two posts ago when I talked about stress that I'd not just share mental, physical, and spiritual symptoms of stress but also what the speaker said you can do to alleviate stress. Annnd I didn't. I left you all looking at a long list going, I have that, that, that, that, that, and that. Great. Now I'm more stressed realizing how much I show signs of stress! … [Read more...]

You guys. I cannot tell you how much I love this recipe. Caesar salad with kale. Plus candied nuts. Plus hot sauce. Plus chicken. I hope the pictures are conveying the deliciousness or I'm going to have to keep inventing words like deliciousness to describe it. I think I'm loving on it so much because it has everything: salty, sweet, spicy. Crunch and creaminess. Hot and cold. Fresh and cooked. It hits so many notes in one bite. … [Read more...]

Mexican Braised Beef
I talked in my last post about a recent trip to Tulum, Mexico for the wedding of two amazing people. I shared a few moments Dan captured from the dance floor...which deserves one last mention below. Also because that trip inspired this dish too. … [Read more...]
Shredded Chicken & Tomatillo Stew
This dish uses cilantro. Let's talk about that for a second. I used to hate cilantro. Yuck. To me, it tasted like the smell of dirty socks, sweaty armpits, or B.O. (B.O.... always makes me think of this Seinfeld.) But it kept showing up in little bits in my food. A little in salsa, and I love salsa. A little in my guacamole, and I love guac. A little in some Thai food, and holy crap I love Thai food. Now, suddenly, I don't loathe … [Read more...]
Creamy Chicken Marsala
Chicken. Marsala. Oh, heck yes. I love chicken marsala. Seriously, one of my favorite flavors of all time. Oh man. Umm, the best. Yikes, I need to watch it or this could starting to sound like a line from Fifty Shades of Grey, all this oooh-ing and aaah-ing. Which, by the way, I haven't heard anything about the movie? Has anyone seen it yet?? Or are you all too hesitant to watch it in the theater. Waiting for the DVD, eh? I couldn't … [Read more...]

Well hello, I’ve missed you! As you may or may not have noticed, I haven’t posted since early last September. I’ve been a little MIA to say the least, but for a good reason. Let’s catch up! … [Read more...]
Un-Buns
Primal. Nut free. Grain Free. Flour free. How do you make sturdy, fluffy, pliable buns out of whole food ingredients? EGGS! That's right, the main ingredient that takes traditional processed sandwich buns and turns them into UN-buns is eggs. The egg is so darn versatile. These rolls, do need a bit of dairy though or they just don't work the same way. So far in my attempts without diary, the rolls were crumbly and didn't quite hold … [Read more...]
Cracklin’ Chicken (from Nom Nom Paleo)
Today's recipe is adapted from the amazing Michelle Tam of Nom Nom Paleo whom I got to meet briefly at her book signing in my Seattle neighborhood!! As you can see below, the place was packed with a line out the door. I've already made this three times. So easy and so good. Perfect for quick weeknight dinners. I had to share her Cracklin' Chicken recipe because I just enjoy it that much. Of course you can also head to her site to … [Read more...]
Homestyle Beef Brisket
One thing I've been enjoying lately is finding a great, inexpensive cut of meat and slowly cooking it to render out the fat and leave it fall-apart-fork-tender. Not only do I like it for those reasons, but it makes the next couple weeks of clean eating super easy! For breakfast, lunch, or dinner I have a delicious protein I'm excited about eating that is extremely versatile. … [Read more...]
Thai Beef Salad
There's nothing like fresh, crunchy ingredients and exotic flavors to satisfy my taste buds. My version of Thai Beef Salad does just that. I cannot eat the same thing every day. It would be so much easier if I could, but alas, my cooking adventures continue. And kudos to you people who can eat salmon and broccoli for every meal. I could never be you. I need spicy, sweet, sour, salty, and umami to satisfy me. I need both new flavors from … [Read more...]
Arugula Lime Pesto with Walnuts & Jalapeño
This is a totally versatile and non-traditional take on pesto. In this version arugula and walnuts replace traditional basil and pine nuts, while lime and jalapeño add a south-western flair. I really like cooking with pestos because they add so much flavor! If you ever think paleo food is boring, get into pesto. This one only has 1 tablespoon of olive oil and 1/3 cup of walnuts so its quite low in calories compared to traditional pestos … [Read more...]
