This Weeknight Italian Chicken Pasta is so simple, I'm not even going to give you a recipe. Well... I am, but not a traditional recipe. It's more of a formula. A framework. It's for your own good. You see, I read a really interesting article the other day titled The Myth of Easy Cooking. Tag line: "An entire industry has been built on the premise that creating gourmet meals at home is simple and effortless. But it isn't true." Dang. It made … [Read more...]

Thai Pumpkin Chicken Curry
It's still cold out side. I guess it is winter after all and I'm clearly still in denial. Booooo. At least I get this Colorado sunshine, so I shouldn't complain, but alas, I will. And I'll crave warm chicken curry. What do you do when you crave warm, hearty comfort food and you want to be healthy at the same time? You throw in lots of veggies, amp up the flavor, add a boost of protein, and voila. A comforting, satisfying dish that won't … [Read more...]
Parmesan Chicken Tenders + GIVEAWAY!
"Would you like some chicken with your ketchup??" Yeah, a co-worker said that to me once. We went out to eat on a work trip and like a little kid, I ordered chicken tenders. (Ok, so I wasn't in the mood for a kale salad. It happens. Even to dietitians.) Apparently, I like a lot of ketchup on my chicken tenders. More than the average person, so I've learned. I'm fine with that. Are you a good protein eater? Eating protein has been a … [Read more...]
Creamy Pesto and Pasta
It's that dreaded question... "What's for dinner?" Listen for the dramatic "Dun! Dun! Duuuun!" to follow. I've been known to make things complicated before. To lean toward elaborate dishes. Impressive. Fancy. Because when I have time to blog, I usually also have time to cook. Let's be real, I started food blogging when I quit my full time job at the end of October 2013. I had lots of time then because I intentionally took time to myself … [Read more...]

Baked Chicken Drumsticks
Soooo this week is a tragic for me. It's the first week that I officially feel chilled to the bone. Ok, ok so calling it a tragedy is probably a little dramatic, I know. I know. I just looove the heat, the sun, a beach, the pool, that whole scene... like no other. So when I'm faced with the fact that fall and soon winter are serious events, I get a little sad. I despise being cold. When fall weather hits, and my hands and the tip of … [Read more...]

Pumpkin and sage are one of my faaaav flavor combinations. Every fall, I bring it out in my cooking! No but seriously. Let me explain... Southwest Quinoa Taco Salad Bowl
My mom makes this uh-maze-ing Black Bean Salsa. It's 4 simple main ingredients {black beans + corn + red pepper + red onion} plus 3 ingredients for the dressing {balsamic + dijon + (optional) olive oil}. A little salt and pepper and bam, you're good to go. It's a great dip but I also love it over salmon or over a salad as the dressing. My college buddy and RD blogger Rachel posted the salsa on her blog Delicious Balance not too long ago. … [Read more...]

Salmon En Croute
Sometimes there's a benefit to my need for background noise. I like to watch shows or listen to music while I'm cleaning the kitchen, folding laundry, or doing other chores I don't always get excited about. It's not very mindful of me to do that, but as I said, sometimes there's benefits. For example, I don't waste really good shows for this. I reserve those for when I can prop up my feet, cuddle with my man, and sink into an episode. I … [Read more...]

Chicken parmesan is usually made with the traditional breading procedure: chicken dipped in flour, dipped in egg, then dipped in breadcrumbs. Then it's pan fried. This recipe, is a liiiitle different. No traditional breading. Makes it a bit easier. Also, I find baking is easier on the cleanup than pan frying. The secret ingredient for this Easy Baked Chicken Parm? Mayonnaise. That's right. Mix some mayo with parmesan, coat the … [Read more...]
BLTC Salad
Bacon. Lettuce. Tomato. Caesar. BLTC. Heck yeah. So I lied. I said two posts ago when I talked about stress that I'd not just share mental, physical, and spiritual symptoms of stress but also what the speaker said you can do to alleviate stress. Annnd I didn't. I left you all looking at a long list going, I have that, that, that, that, that, and that. Great. Now I'm more stressed realizing how much I show signs of stress! … [Read more...]
Spicy Kale Caesar with Chicken and Candied Pepitas
You guys. I cannot tell you how much I love this recipe. Caesar salad with kale. Plus candied nuts. Plus hot sauce. Plus chicken. I hope the pictures are conveying the deliciousness or I'm going to have to keep inventing words like deliciousness to describe it. I think I'm loving on it so much because it has everything: salty, sweet, spicy. Crunch and creaminess. Hot and cold. Fresh and cooked. It hits so many notes in one bite. … [Read more...]
