Southwest Quinoa Taco Salad Bowl
My mom makes this uh-maze-ing Black Bean Salsa. It's 4 simple main ingredients {black beans + corn + red pepper + red onion} plus 3 ingredients for the dressing {balsamic + dijon + (optional) olive oil}. A little salt and pepper and bam, you're good to go. It's a great dip but I also love it over salmon or over a salad as the dressing. My college buddy and RD blogger Rachel posted the salsa on her blog Delicious Balance not too long ago. … [Read more...]

Thank the lawd. So I'm giving my body a little rest by sitting down, propping my feet up, and bringing you this yum-tastic frittata recipe. Memorizing Amino Acids
Essential, conditional, non-essential, oh my! So many amino acids to memorize. As I've been studying for my registered dietitian (RD) exam, I've come across some helpful ways of remembering things on other sites whether RDs, med students, professors, you name it. I appreciate these resources and wanted to add to the deck. I decided today to share how I remember the amino acids (AA) for the exam so that others too can use this trick as a … [Read more...]

Creamy Avocado Basil Sauced Spaghetti
Avocados are oh so trendy. I really feel like they're "cool". Eating them, taking pictures of them... it's like a universally loved and accepted food right now. I really feel like if an avocado was in high school, she'd win homecoming queen. So hot right now. They're everywhere: mashed straight up (with a 'lil salt of course) on toast, in guacamole (obbbviously), baked with an egg cracked inside, in smoothies, in faux chocolate pudding, or … [Read more...]

Grilled Pizza Brava
Grilling pizza. Wow, what an addition of flavor to pizza I can't describe. You've GOT to try this. Because I was making pizza dough by hand for the first time, I watched this very helpful video from Food Network. If you're uneasy about making your own dough this will be very helpful and put you at ease! I used the same method in the video. What I liked the most was that I could do it all by hand! I didn't need a mixer. The video doesn't … [Read more...]
