Serves 6-8 people as an appetizer and 4 as a side dish.

  • 12 Roma Tomatoes, halved lengthwise, cores and seeds removed
  • 2 teaspoons Herbs de Provence
  • 2 tablespoons olive oil
  • salt and pepper, to taste
Instructions
  1. Preheat oven to 400 F.
  2. Grease a baking sheet lightly with 1 T olive oil.
  3. Lay tomatoes on baking sheet, skin side down. Drizzle with 1 T olive oil, sprinkle with Herbs de Provence, and season with salt and pepper.
  4. Bake for 1 hour.
