Buffalo Citrus Chicken Wings

Ingredients
  • 1½ pounds chicken wings
  • 3 tablespoons ghee (or butter)
  • 1 clove garlic, minced
  • 1 lemon, zested and juiced
  • ⅓ cup your favorite hot sauce
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon red pepper flakes
Instructions
Wings
  1. Steam the wings for 20 minutes.
  2. Spray or grease a wire rack and place it on a baking sheet.
  3. Place the steamed wings on the wire rack and refrigerate for 1 hour, uncovered.
  4. Heat oven to 425 F.
  5. Take wings from fridge and bake for 20 minutes. Flip chicken pieces over, and bake another 20 minutes.
  6. Add the hot baked wings to the sauce, stir, and serve.
Sauce
  1. In a small saucepan, combine ghee and garlic over low heat. Cook for five minutes, cooking the garlic until slightly brown.
  2. In a large bowl combine cooked garlic and butter with lemon zest, lemon juice, hot sauce, Worcestershire sauce, and red pepper flakes.
