Herbed Green Bean and Radish Salad

This dish is vegan, Whole30, and paleo. The addition of feta would make it primal.

Ingredients
  • ½ lb green beans
  • 5 radishes, sliced thin (I use a mandolin)
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
Instructions
  1. Bring a medium size pot of water to a boil. In the meantime, trim the stem end of the green beans off.
  2. Place trimmed green beans in the boiling water for 5 minutes. Drain into a strainer and run cool water over them to stop the cooking process and keep them tender-crisp.
  3. In a medium bowl, add the cooked green beans and the rest of the ingredients listed. Toss to combine and serve.
