Heirloom Tomato Bake

If heirloom's aren't available, use your grocer's scale to weight out 2 pounds of any other tomato variety (like on-the-vine, beefsteak, or Roma). If your tomatoes are super juicy, you can use more bread than is called for to help soak up the juices.

Ingredients
  • 1½ tablespoons butter (plus more to butter your baking dish)
  • 1 cup bread, finely diced (ciabatta, sourdough, rosemary loaf, olive loaf, rye, gluten-free, whatever you like!)
  • 2 green bell peppers, finely diced
  • ½ yellow onion, finely diced
  • 4 large heirloom tomatoes (I like alternating colors!)
  • 3 cups mozzarella cheese, shredded
  • parmesan cheese, as desired
  • salt and pepper
  • ¼ cup basil, thinly sliced
Instructions
  1. Preheat your oven to 375 F. Butter a baking dish (my dish was 12¼" x 8¾") and set aside.
  2. Over medium heat, melt the butter. Add the green pepper and onion. Cook for about five minutes, until soft. Season with salt and pepper. Take off the heat and stir in the bread.
  3. Place half of the bell pepper mixture evenly across the bottom of the baking dish.
  4. Sprinkle with half the mozzarella cheese (1½ cups).
  5. Layer the tomatoes in the pan. Season with salt and pepper.
  6. Top tomatoes with the remaining half of the bell pepper mixture.
  7. Top that with the remaining 1½ cups mozzarella cheese, and sprinkle as desired with shredded parmesan. Season with salt and pepper.
  8. Bake for 30 minutes or until the top is golden. When hot out of the oven, sprinkle with basil. Cool at least 10 minutes, then slice (or scoop!) and serve.
