Not My Daddy's Apple Crisp

Serves: 6-8 servings
- 5 apples, diced into about ½ to 1 inch cubes (granny smith, honeycrisp, golden delicious, fuji, or a combo)
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 tablespoons tapioca starch (or corn starch)
- ⅓ cup maple syrup (or honey)
- 1 cup old-fashioned oats
- ½ cup almond flour
- ¾ cup chopped nuts (walnuts, pecans, or a combo)
- ¼ cup maple syrup
- 4 tablespoons butter, melted (or coconut oil)
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- Preheat oven to 350 F. Grease a 9x9 baking dish with butter.
- In a large bowl mix together all of the apple filling ingredients. Spread evenly into the greased baking dish.
- In a medium bowl mix together streusel ingredients. Spread evenly over the apples.
- Bake for 45-60 minutes until topping is golden brown and the filling is bubbly.
- Allow it to cool for about 10 minutes (torture, I know) before serving with your fav whipped cream or ice cream!
