Not My Daddy's Apple Crisp

Ingredients
Apple Filling
  • 5 apples, diced into about ½ to 1 inch cubes (granny smith, honeycrisp, golden delicious, fuji, or a combo)
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons tapioca starch (or corn starch)
  • ⅓ cup maple syrup (or honey)
Streusel Topping
  • 1 cup old-fashioned oats
  • ½ cup almond flour
  • ¾ cup chopped nuts (walnuts, pecans, or a combo)
  • ¼ cup maple syrup
  • 4 tablespoons butter, melted (or coconut oil)
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
Instructions
  1. Preheat oven to 350 F. Grease a 9x9 baking dish with butter.
  2. In a large bowl mix together all of the apple filling ingredients. Spread evenly into the greased baking dish.
  3. In a medium bowl mix together streusel ingredients. Spread evenly over the apples.
  4. Bake for 45-60 minutes until topping is golden brown and the filling is bubbly.
  5. Allow it to cool for about 10 minutes (torture, I know) before serving with your fav whipped cream or ice cream!
