Peanut Butter Chip & Chocolate Chunk Cookies

Ingredients
  • 1 cup unsalted butter, at room temperature (2 sticks)
  • ¾ cup brown sugar
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2¼ plus ⅛ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3 (1 oz.) boxes instant sugar-free Cheesecake Jello pudding mix
  • 1 (12 oz.) bag Reese's Peanut Butter Chips
  • 1 (12 oz) bag semi-sweet chocolate chunks
Instructions
  1. Preheat oven to 375 F.
  2. Cream butter and sugar in a standing mixer until light and fluffy.
  3. Add vanilla, then eggs one at a time.
  4. Combine the flour, pudding, salt, and baking powder in a large bowl. Gradually add them to the butter mixture.
  5. Stir in the peanut butter chips and chocolate chunks by hand.
  6. Use a spoon to drop about 2 tablespoons of batter per cookie onto a cookie sheet.
  7. Bake for 11-14 minutes or just until very light golden brown along the bottom edges.
