Caesar Lover's Salad Dressing

Serves: 1¼ cups dressing
- ½ shallot, chopped
- 2 cloves garlic
- 4 anchovies canned in oil, drained
- 1 egg yolk
- 1 lemon, zested and juiced (1/4 cup lemon juice)
- ½ cup olive oil
- ½ cup parmesan cheese, grated
- ½ teaspoon ground pepper
- ½ teaspoon salt
- Add shallot through lemon into a food processor. Run for about 15-20 seconds to puree.
- With the food processor running, SLOWLY drizzle in the olive oil.
- Pour the dressing into a storage container. Stir in the parmesan, salt and pepper.
