*Chicago Steak Seasoning is a spice blend from Penzy's Spices. It includes salt, pepper, sugar, garlic, onion, lemon zest, and natural hickory smoke flavor. If you don't have this blend, you can just season your chicken with the same spices/ flavors.

Ingredients
  • 2 slices bacon
  • 2 chicken breasts
  • ½ teaspoon Chicago Steak Seasoning*
  • 1 head hearts of romaine (or two if you want a bigger salad), chopped
  • ½ cup cherry tomatoes, halved
  • Caesar Salad Dressing
  • Sriracha for serving (optional)
Instructions
  1. In a cold cast iron skillet, add two slices of bacon. Turn heat to medium low. When bacon edges begin to brown, flip bacon.
  2. When bacon fully cooked, set aside on a paper towel lined plate.
  3. Season both sides of chicken with Chicago Steak Seasoning. Add chicken to pan, cooking it in the remaining bacon drippings. After chicken has cooked 8-10 minutes and is browned, flip and cook another 10 minutes or until cooked through. (For quicker cooking, dice chicken into cubes before adding to pan.)
  4. When chicken is fully cooked take out of pan and set aside to rest.
  5. Chop or break bacon with your hands into smaller pieces.
  6. In a large bowl, add romaine, tomatoes, bacon. Add your desired amount of Caesar Salad Dressing and toss to combine. Slice or dice chicken.
  7. Plate salad and top with chicken. Drizzle with Sriracha if desired, then enjoy!
