Serves: 2 medium pancakes
Ingredients
1 banana
2 eggs
Instructions
Peel banana and add to a bowl. Mash with a fork to a form a puree.
Crack the eggs into the bowl and scramble into the mashed banana.
Heat a small skillet over medium-low heat. Add a little butter, coconut oil, or cooking spray. Pour in half the batter. Cook about 3-4 minutes or until the edges look set. Flip and cook another 1-2 minutes.
Plate and top as desired. I like raspberries, chia seeds, and maple syrup.
