Basil Pesto

Serves: 1¼ cups
4 oz package basil, stems discarded (about 3 cups basil leaves, lightly packed) ¾ cup pine nuts 4 small cloves garlic 1 cup extra virgin olive oil 1 cup parmesan cheese, grated ½ teaspoon each salt and pepper Add the basil through garlic to a food processor and pulse about 10-20 times until everything is finely chopped. Turn food processor on, and slowly drizzle in the olive oil. Take off the lid and remove the blade. Stir in the parmesan, salt and pepper.
