When I make this dish I like to eat it with Summertime Shrimp on top! The pasta makes a wonderful meal when paired with a protein like shrimp or grilled chicken. It would even be delicious with some added roasted veggies.

Serves: 2
Ingredients
Pasta
4 oz thin spaghetti (or gluten-free pasta, or veggie noodles of your choice)
Creamy Avocado Basil Sauce
1 large avocado (or 2 small)
1 clove garlic, roughly chopped
¼ cup fresh basil, loosely packed
2 tablespoons lemon juice
1 tablespoon extra virgin olive oil
¼ teaspoon salt
Instructions
Cook the pasta according to the package directions.
Add the avocado through salt to a food processor and blend until smooth.
Stir the avocado sauce into the cooked pasta and serve!
My favorite way to eat this pasta is with some Summertime Shrimp on top!
